Banana Cupcake
Ingredients:
• 1 1/2 cup Happy Grains All-Purpose Flour
• 1 tsp baking powder
• 3/4 tsp baking soda
• 1/2 tsp iodized salt
• 1 tsp cinnamon powder
• 7 pcs ripe banana, mashed
• 3/4 cup refined sugar
• 1/2 cup vegetable oil
• 1 pc egg
Procedure:
1. Preheat the oven to 175°C.
2. Line muffins pan with cupcake liners then set aside.
3. Sift together the Happy Grains All-Purpose Flour, baking powder, baking soda, iodized salt, and cinnamon powder into mixing bowl, then set aside.
4. In a separate bowl, mix mashed bananas, oil, and sugar until consistency thickens.
5. Add eggs and mix until well combined.
6. Make a well in the middle of the flour mixture then pour in the banana mixture. Continue mixing until its well incorporated.
7. Spoon the batter mixture into the lined muffin pans until each liner is about 3/4 full.
8. Bake for 12 minutes or until light brown
TIP: To make sure the Banana Cupcakes are done baking, try inserting a toothpick into the center of the cupcake and check if it comes out clean.
Unfrosted Cupcakes
Ingredients:
• 1 cup and 2 tablespoons Happy Grains All-Purpose Flour
• 2 tablespoons cornstarch
• 1 1/4 teaspoons baking powder
• 1/8 teaspoon salt
• 3/4 cup granulated sugar
• 2 large eggs
• 1 1/4 teaspoons vanilla extract
• 4 tablespoons unsalted butter, melted
• 1/4 cup vegetable oil
• 1/2 cup milk
Procedure:
1. Preheat the oven to 175°C.
2. Line a 12-cup muffin tin with cupcake liners.
3. Whisk Happy Grains All-Purpose Flour, cornstarch, baking powder and salt in a bowl.
4. In a separate bowl, beat the sugar with eggs and vanilla extract until smooth and thick to make batter.
5. Add the melted butter and oil into the batter, and beat until incorporated into the batter
6. Add all dry ingredients and milk in 3 alternating batches into the batter, beat well between additions.
7. Pour batter into the lined muffin tins, fill until two-thirds full.
8. Bake in the center of the oven for 20-23 minutes.
9. Let it cool in the muffin tin then transfer to a wire rack to cool completely.
TIP: Frost and top your cupcakes as desired! You can top them with whipped cream, candies, chocolates like Jack ’n Jill Nips, crushed Presto Creams or Cream-O cookies, and even syrup!
Oatmeal Raisin Cookies
Ingredients:
• 1 1/2 cups Happy Grains Cookie Flour
• 1 cup raisins
• Hot water, enough to cover raisins
• 1 teaspoon baking powder
• 1/2 teaspoon salt
• 3 cups oats
• 1 cup unsalted butter
• 1 1/2 cups brown sugar
• 2 large eggs
• 1 teaspoon vanilla extract
Procedure:
1. Soak raisins in hot water for 15 minutes. Set aside.
2. Whisk Happy Grains Cookie Flour, baking powder, and salt in a bowl. Stir in oats then set aside.
3. In a mixer, beat butter and brown sugar together until well combined.
4. In the same mixer, beat in eggs and vanilla.
5. Stir in flour mixture into the mixer until all ingredients are combined to make batter.
6. Drain raisins and mix into the batter.
7. Chill the dough for 1 hour.
8. Preheat the oven to 190°C.
9. Line sheet pans with parchment paper.
10. Scoop tablespoon-sized portions of dough on lined sheet pans.
11. Bake 12-14 minutes.
12. Let it cool then transfer to a wire rack to cool completely.
TIP: To find out if the cookies are done baking, make sure they are lightly browned!
Coffee Cookie Crumble
Ingredients:
• 2 1/4 cups Happy Grains Cookie Flour
• 1 cup granulated sugar
• 1/3 cup Great Taste Granules Concentrated Coffee
• 1 teaspoon coffee extract
• 1/4 cup milk powder
• 1 tablespoon cornstarch
• 1 3/4 teaspoons fine salt
• 3/4 cup unsalted butter, melted
Procedure:
1. Preheat the oven to 149°C
2. Beat Happy Grains Cookie Flour, sugar, Great Taste Granules Concentrated Coffee, milk powder, cornstarch, and salt until combined.
3. Beat in butter and coffee extract until fully combined.
4. Line rimmed baking sheet with parchment paper
5. Scatter mixture on baking sheet
6. Bake for 40 minutes but stir every 10 minutes (using a metal spatula).
7. Sift through colander then discard fine crumbs
